Vegetable cutlets with rice is a great dish for a fasting day or a light dinner. Make such a dish at home under the power of every housewife, because any special cooking skills are not required for its preparation.

You will need

  • - one medium-sized carrot;
  • - 1/4 of a medium-sized cabbage
  • - half a glass of uncooked rice;
  • - three potatoes;
  • - three onions;
  • - two eggs;
  • - 1/2 cup flour;
  • - salt and pepper (to taste);
  • - vegetable oil;
  • - breadcrumbs.

Pour 500 ml of water into the pan and put it on fire. As soon as the water begins to boil, pour rice into it, salt and cook for 15-20 minutes (rice should ultimately be slightly cooked). Turn off the gas, drain the water and rinse the grits.

Peel and rinse carrots, potatoes, cabbage, onions and garlic thoroughly in cold water. Cut vegetables and mince through a meat grinder.

Next, you need to slightly squeeze out the resulting mass to remove excess juice (if this is not done, then more flour will be needed for cooking, which will negatively affect the taste of cutlets).

In a deep bowl, mix the minced vegetables and rice, add eggs to the mixture, salt and pepper (at this stage, you can add your favorite spices or herbs to the resulting mass). Mix everything thoroughly, then pour flour into the minced meat and mix it again to get a homogeneous mass.

Put a pan with a thick bottom on the fire, pour oil into it. Form small patties from the minced meat, roll them in breadcrumbs and fry on both sides until golden. To make them bake faster, then when frying them, the pan can be covered with a lid.

Put the prepared vegetable patties on a dish and decorate with greens. You can serve them with any sauce and side dish.

Useful advice

These vegetable cutlets go well with any sauces, but with spicy, cooked on the basis of garlic or pepper, it is best.
