Mushroom chicken soup is a great alternative to regular chicken broth soup. The delicate taste and aroma of champignons add zest to the familiar dish. Uncomplicated in preparation, it will surely appeal to both children and adults.

You will need

    • 300 g of chicken meat;
    • 200-300 g of champignons;
    • 2-3 onions;
    • 1 carrot;
    • 3-4 medium potatoes;
    • 2-3 cloves of garlic;
    • salt
    • Bay leaf
    • spices to taste;
    • frying oil;
    • 2.5-3 liters of water;
    • parsley and dill.

Rinse the chicken under running water. Put in a pan and fill with water. Put on the fire and, bringing to a boil, let it boil for 2-3 minutes. Discard the first broth. Rinse chicken pieces under running water again. Putting in a pan, fill with water in 2/3 of the container. Put to cook and, bringing to a boil, reduce the heat to medium. Add salt and spices.

Peel and rinse onions, carrots and garlic. Chop the onion and garlic finely. Grate the carrots. Heat vegetable oil in a pan and fry the onion until golden brown, periodically stirring. Add the grated carrots. Stir and continue to simmer. Put chopped garlic in a pan and simmer another 2-3 minutes. Salt.

Rinse the mushrooms in running water. Cut into thin plates. Fry in warmed vegetable oil, stirring occasionally. Salt.

Remove the pieces of chicken from the broth. Cool slightly and separate the meat from the bones. Put the meat back into the broth.

Peel, wash and cut the potatoes into strips. Put in boiling broth. Cook until half cooked. Then put the stewed mushrooms and vegetables in the broth. Stir and continue cooking until the potatoes are soft.

1-2 minutes before cooking, add a couple of bay leaves to the soup. Let it boil and turn off the heat.

Serve chicken mushroom soup with finely chopped greens and white bread croutons.

note

For the preparation of broth, it is advisable to use soup sets, chicken wings. Chicken fillet is low in fat.

For soup, it is advisable to use a second broth. It has the lowest content of harmful substances released during cooking.

Instead of mushrooms, you can use any other mushrooms to your taste.
