For the preparation of cutlets, you can use not only salmon, but also any red fish. Peel the fillet from the skin and seeds, cut into pieces.

Cut the chilled butter (can be put in the freezer for 10-15 minutes) into cubes.

Put the pieces of fish, cubes of oil and peeled crab sticks in a blender, punch. Instead of a blender, you can use a meat grinder, as it is more convenient. Knead the resulting meat, season with salt, pepper and thyme, if desired, you can add your favorite spices. Butter must be cold, otherwise it will get stuck in a meat grinder. If desired, you can add an egg, but then sift a few tablespoons of flour into the minced meat.

Pour flour onto a plate or table. Pour some water into a bowl, moisten your hands and form minced meat patties. Roll each cutlet in flour.

Melt a small amount of butter in a frying pan, fry the prepared patties until golden on both sides. Put the fried cutlets on a paper towel, so you remove excess fat. Serve with garnish.
