    • 2 kg of tomatoes;

    • 300 ml of vegetable oil;

    • 1-2 pods of hot pepper (optional);
    • salt to taste.

Wash the eggplant, remove the stalks. Lubricate the baking sheet with vegetable oil, spread the vegetables on a baking sheet (whole) and place in an oven preheated to 180 ° C. Bake eggplant for 30 minutes.

While the eggplants are baked, peel the carrots, onions and garlic. Chop onion and garlic into small pieces. Grate the carrots on a coarse grater.

Heat a frying pan with vegetable oil and fry the chopped onion until golden brown. Put it in a bowl, and in a pan fry the carrots.

While the eggplant caviar is being cooked, wash the jars, sterilize and dry them. Boil the lids.

Add the vinegar to the caviar, mix it and place in banks. Twist the jars, turn them upside down and wrap them up. Wait for the caviar to cool completely, and then store it in a cool place.

For the preparation of caviar, you need to choose small eggplant with small seeds and tender flesh.

Eggplant for caviar can also be baked in the microwave, setting it to full capacity. Before baking, prick them with a fork in several places. Eggplant will be ready in about 10 minutes.
