Take half a loaf of white bread, cut the crusts, cut into slices. Put soaked in a deep plate with milk. Prepare the vegetable broth: thoroughly wash 2 carrots, 2 onions, chop them finely. Put in a pan, fill with three glasses of water, cook over medium heat for about half an hour. 10 minutes before the end of cooking, add 2 bay leaves, several peas of allspice to the broth. Strain the broth.

Rinse 500 grams of veal, dry with a towel, cut into pieces and scroll in a meat grinder. Rub on a coarse grater 20 grams of cheese. Wash a bunch of fresh parsley, drain, chop finely. Cut the lemon into halves, with one of them using a fine grater rub the zest. In a large bowl, combine veal minced, soaked bread, parmesan and one large egg. Salt, pepper, add the cooked zest and half chopped parsley. Stir well with a fork first, then with your hands.

Blind meatballs. Sprinkle flour on a flat dish. Roll each meatball in it.

Peel one onion (it is better to take shallots), chop finely. So that the bow does not pinch your eyes, open the tap with cold water and periodically substitute the knife under its stream. Pour 3 tablespoons of olive oil and the same amount of vegetable broth into a deep pan. Pour onion there and simmer over low heat.

When the onions are fried until golden brown, carefully place the meatballs in the pan. After a few minutes, when the meatballs change color slightly, add half a glass of white wine to them. It should evaporate. After that, start pouring the broth in small portions. After 12-15 minutes, when a thick sauce is formed, the meatballs will be ready. Pour the prepared meatballs with the resulting sauce, sprinkle with the remaining parsley.

Lemon should be used fresh. So that the peel does not spoil the bitter taste of meatballs, you need to remove only the yellow layer from the lemon, leaving the white part untouched.
