The chemical composition of beans is an excellent substitute for meat. You can prepare beans in a thousand different ways - most often it is used as a filling for pies, the basis for main dishes or side dishes, and also added to soups, vinaigrette and other salads. Soup or borsch with beans can be prepared without meat broth - adding the right amount of beans, and without meat you will make this dish quite rich in taste. To make the dish more dense, you can also add mushrooms to the beans. Beans go well with almost all vegetables - tomatoes, eggplant, zucchini, carrots, paprika, celery and asparagus. For dietary dishes, you can cook beans by boiling it after preliminary soaking (this is a necessary condition). The fact is that the beans are cooked for a long time, so if you plan to cook a dish of beans, it is better to soak the right amount of bean beans since the evening. Pre-soaking will help make the beans soft, it will be better succumb to heat treatment. An original bean salad can become a real table decoration.

To prepare such a salad, we need 300 grams of beans, one large onion, one large carrot, 150-200 grams of mushrooms (preferably mushrooms or oyster mushrooms), one large tomato, one paprika, olives, grated cheese, fresh herbs and spices to taste, any vegetable oil for dressing.

• Boil pre-soaked beans until cooked (you will have to spend at least forty minutes on this).

• Fry finely chopped onions with carrots until golden brown and mix with beans.

• Fry the mushrooms; grate hard cheese on a coarse grater and add it all to the salad.

• Cut the tomato, pepper, herbs and olives, add to the salad and mix.

• Season the salad with any vegetable oil (soy, olive, sunflower), salt, add spices to taste - and you can serve it on the table.
