But, firstly, real ice cream without "chemistry" in supermarkets is now simply not found. And secondly, it doesn’t take so much time to prepare it, and it’s a simple process.

Pour the milk into a saucepan, put on the stove, make a medium heat, so that the milk does not run away while other products are being prepared.

Wash the eggs, separate the yolks from the proteins. Take another bowl, put the yolks, sugar and starch in it. All must be thoroughly mixed. It is to mix, and not beat until a thick sugar mass is obtained. The consistency of the mass should resemble porridge.

In warmed milk (in warm, not boiled), add butter. Stir everything until the butter melts and becomes a homogeneous mass with milk. Do not violate the proportions and put the oil more than indicated in the recipe, disrupt the recipe is allowed only to the smaller side, otherwise the ice cream will taste like butter.

A few tablespoons of warm milk and butter should be poured into the egg-sugar mass. Mix everything thoroughly. Warm milk will help dissolve sugar faster. By consistency, the mass should resemble sour cream.

When the milk boils, it should gradually pour a mixture of eggs with sugar into a thin stream. Do not forget to constantly stir the milk, otherwise the mixture will burn or curl. It is necessary to stir until the milk boils again. After boiling literally 10 - 15 seconds, turn off the fire.

Remove the mixture from the heat and allow to cool naturally to about 40 degrees, so that everything can be refrigerated without harm to the freezer. Pour the future ice cream into any convenient molds.

The molds filled with the milk mixture are sent for 6-8 hours to the freezer. After this time, ice cream can be served at the table.
