    • 2 tablespoons of semolina;
    • 1 teaspoon of salt;
    • ground black pepper to taste;
    • several branches of greens (dill

    • 3-4 tablespoons of sunflower oil for frying cutlets;
    • breadcrumbs or wheat flour for boning.

Wash turkey breast under running water and pat dry with a paper towel. Remove the skin with a sharp knife and separate the meat from the bones. Cut the resulting fillet into small pieces and pass it through a meat grinder.

Soak slices of white loaf for 10 minutes in warm milk. Cut the onion into 4 parts and pass through a meat grinder. Peel the potatoes, cut into small pieces and pass through a meat grinder. Combine minced meat with onion and potatoes.

Squeeze the loaf slices soaked in milk lightly and pass through a meat grinder or beat in a blender.

In the resulting mass add 2 tablespoons of semolina, a teaspoon of salt and ground black pepper to taste.

Finely chopped greens washed in running water with a knife or in a blender. Add to the minced meat. Stir all the ingredients thoroughly in a convenient bowl.

Form small balls from the resulting mass and squeeze lightly on both sides. Roll the patties in breadcrumbs or flour. Heat 3-4 tablespoons of the patty butter on both sides over high heat for about 5-7 minutes. Cover the patties and leave on low fire until fully cooked. About 15 minutes.

Useful advice

Adding semolina to minced meat makes the cutlets more lush and tender.
