A muddy meat broth can ruin the impression of a dish prepared on its basis. But there are some simple rules that allow you to avoid the appearance of turbidity, or correct the situation if the broth still lost transparency.

When cooking the broth carefully collect the resulting foam. To do this, there are special spoons with holes. In order not to shake the foam into the sink and not splatter everything around, just dip the spoon into a plate of warm water, the foam itself will move away from the spoon. Limescale is best collected when the broth begins to boil, so turn down the heat, because with a strong boil, the foam will inevitably mix with the broth.

If the broth is opaque, cook a small amount of rice, place it in a linen bag, tie. Bring the broth to a boil and dip the bag of rice into the broth for several minutes. The broth will not become ideal after such a procedure, but it will be noticeably more transparent.

Another way to lighten the broth is to add specially prepared carrots to it. To do this, peel the carrots, cut it in half along each half in half. Dry the carrots in a frying pan without oil. When the broth is almost boiling, put the carrots in it, it will bind small particles of scale, and the broth will be easier to strain. Please note, if carrots are especially rich in carotene, it can give the broth a yellow color.

If the transparency of the broth should be comparable to a tear, use egg whites. One and a half liters of broth will require one protein. Beat them in a strong foam, you can stretch the shell by hand and add to the resulting mass. Cool the prepared meat broth to a temperature of about 70 degrees, put the protein in the pan, stir well and let stand a little. The resulting flakes should be removed with a spoon. Strain the broth through a sieve with a cloth. The sieve will collect the largest flakes, and smaller particles will settle on the fabric. If the fabric does not cope, lay a sieve with blotting paper and slowly pour in the broth. This method of cleaning the broth gives the best result.
