Fresh champignons remain fresh for 5 to 15 days, depending on storage temperature. Freshly picked mushrooms are recommended to be processed no later than two to three hours after harvest. If the champignon is yellowed, grayed, moldy, softened, it is not suitable for food. A large number of harmful and poisonous microorganisms have already accumulated in it.

Instruction manual

Sort forest mushrooms by size: small, medium and large for better processing. Small mushrooms are processed in whole, medium ones can be divided into a hat and a leg, and large ones can be cut into pieces. Peel the bottom of the leg of champignon from the ground and cut the root of the mushroom to the very pulp of the leg. Wormy places are also clipped. If required, the skin is also peeled off the hat. Also with a clean, slightly damp waffle towel, you can easily remove dirt from the mushrooms.

Mushrooms should be thoroughly washed under running water, not soaking so that they do not absorb water and become tasteless. If the mushrooms are too small, it is not necessary to peel each mushroom separately, just rinse them in a colander under the stream, slightly fingering with your hand. Then pour them on a dry towel, pat it dry with a napkin. For longer storage, champignons (both cultivated cultivated and ordinary forest ones) are recommended to be washed in water with vinegar and citric acid. Enough 1 tablespoon of vinegar and acid per liter of water. To prevent the mushrooms from darkening in the future, put them in a colander and scald with boiling water at least two times.

In grocery supermarkets and markets, they often sell cultivated cultivated champignons, which do not need to be cleaned at all. It is enough to rinse them with water and scald with boiling water. Then you can cook from them. Mushrooms are not recommended to boil even 2 minutes, otherwise they will lose their aroma and unique taste. Prepare a salad of these mushrooms, in which, by the way, the champignons are put raw. Also use fresh mushrooms for barbecue, pizza, any main dishes.
