    • - 2 tsp oregano;

    • For chicken in chocolate sauce:
    • - 1 chicken;
    • - 250 ml of chicken stock;
    • - 3 tomatoes;
    • - 1 onion;
    • - 2 cloves of garlic;
    • - 1 chili pepper;
    • - 50 g of almonds;
    • - 50 g of black 70% chocolate;
    • - 1 tsp ground coriander;
    • - 1 tsp wheat flour;
    • - 2 tbsp vegetable oil;
    • - salt to taste.

Chicken in an envelope

Wash the chicken breasts, dry on a kitchen towel, remove the bones. Cut the chicken into large pieces. Fold in a bowl, pour 1 tbsp. unrefined olive oil. Salt, pepper and mix. Leave the chicken to marinate for 10-20 minutes.

Peel and wash the vegetables. Chop onions and celery stalk. Red and green bell peppers cut into half rings. Chop the garlic finely. Heat a little olive oil in a pan and sauté the vegetables until tender.

Sauté the marinated chicken fillet on all sides until golden brown in olive oil. Cheese (feta, kefalotiri, kefalogravera) cut into cubes with a side of 1.5 cm. Heat the oven to 180 ° C. Divide the fried vegetables and chicken into 4 equal parts. Prepare 4 sheets of baking paper.

Put pieces of chicken breast on baking paper, sprinkle oregano on top and put vegetables, cheese cubes. Wrap the edges of the paper as an envelope.

Lubricate the baking sheet with oil and put chicken envelopes on it. Sprinkle them on top with water and put in the oven for half an hour. Chicken meat should be tender and soft.

Chocolate Chicken Sauce

Wash the chicken, pat it with a paper towel and cut into portions. Cut the onions in half rings, chop the garlic. Peel the chili peppers and chop finely. Pour the tomatoes over boiling water, remove the peel. Then cut into 4 pieces and remove the seeds. Dice the pulp. Grind the almonds into flour, grate the chocolate on a coarse grater.

Heat vegetable oil in a pan and fry the chicken for 5 minutes on all sides. Transfer the chicken to a bowl. Put pepper, garlic and onions in the same pan and sauté for 2 minutes. Return the chicken pieces to the vegetables, pour in the broth and simmer over medium heat for about half an hour.

Remove the chicken and lay it on the dish. Combine almonds, flour and tomatoes. Salt, add coriander and stir. Add the mixture to a pan with vegetables, stir and simmer for 5 minutes. Then pour the chocolate, remove from heat and whisk the sauce with a whisk. Strain the chicken with hot chocolate sauce.
