Put dry active yeast and sugar in a small bowl and dilute them with warm water. Stir everything and leave in a warm place for 20-30 minutes. During this time, the yeast will begin to disperse, and foam will appear on the surface of the liquid.

Sift flour into a large bowl or basin, add salt, bran and mix everything. Add vegetable oil (olive or sunflower) to this mixture, depending on your taste.

Pour water with yeast into a container with flour in a thin stream, carefully stirring all the ingredients with a wooden spatula. Do this until the flour has absorbed all the liquid and you will not get a homogeneous mass.

Knead the dough by hand for about 5 minutes until it becomes soft and elastic. This procedure can be facilitated by using a food processor. In it, knead the dough for 2-3 minutes at medium speed and a couple of minutes at high. Well-kneaded dough should not stick to the hands or to the walls of the combine cup.

Form a ball from the kneaded dough and leave it in a warm place for one and a half or two hours in a warm place.

The dough should increase two to three times. When it comes up, form a round loaf from it, make a cross-shaped incision at the top and transfer to a baking sheet sprinkled with cornmeal or bran. Cover future bread with a kitchen towel and let it sit in a warm place for about one hour.

Before baking, put a bowl of cold water on the bottom of the oven.
