Apricot pie is not only very tasty, but also a healthy dish. Baking it requires the simplest ingredients and about an hour and a half time. Ready-made fragrant cake will be a true decoration of any table.

You will need

    • 500 g of apricots;
    • 200 g butter;
    • 200 g of sugar;
    • 2 tsp vanilla sugar;
    • 3 eggs;
    • 10 g of baking powder or 1 tsp. slaked soda;
    • 600 g of flour.

Divide the thoroughly washed apricots in half, free from the seeds and cut into slices. Rub the butter with vanilla and sugar, add the eggs and mix well. Mixing can be stopped when sugar grains no longer feel.

Add flour and baking powder (it can be replaced with soda), knead the dough. It should turn out quite thick and not stick to your hands. The quality of the pie depends on the consistency of the dough - if the dough is liquid, it will bake poorly. Outside it may already start to burn, but inside it will still be damp.

Prepare the mold by greasing it with vegetable or butter. At the bottom of the mold, lay two-thirds of the dough and flatten, the edges should slightly rise on the sides of the form, forming a semblance of a shallow (2-3 cm) bowl.

Put the apricots on the dough, it is advisable to lay them out in even symmetrical rows - so beautiful. But you can simply pour the slices and evenly distribute them over the dough, which saves time.

Roll out the remaining dough into a layer about 5-7 mm thick and cut them into strips 1.5–2 cm wide. Lay them on apricots in two overlapping rows, you will get a grid of dough through which fruit slices are visible.

Preheat the oven to 180 degrees and put the pie in it for about 35-40 minutes. Watch how it is browned. If necessary, slightly reduce the heating temperature.

The readiness of the cake is determined in the traditional way - pierce it with a toothpick. If there are no traces of dough on it, the dish is ready. As a rule, such a check is required only at the first preparation. Having made a pie two or three times, you will experimentally select the right time and the most suitable temperature for baking.

After removing the cake from the oven, grease its upper surface with butter, this will give it a beautiful shine. The finished dish should be served slightly cooled, but not cold. You can offer milk, compote, jelly or tea to the pie. According to this recipe, you can bake a cake not only with apricots, but also with apples, peaches, plums.
