You will need
- - whole turkey with offal 4.5 kg;
- - butter 200 g;
- - flour 4 tbsp. spoons;

- - celery 2 pcs.;
- - carrots 1 pc.;
- - Bay leaf;

- - parsley;
- Aromatic additives:
- - lemon 1 pc.;
- - onion 1 pc.;
- - thyme 10 branches;
- - rosemary 3 branches;
- - sage 2 branches;
- - parsley 10 branches;
- - Bay leaf;
- - leek 1 pc.

Remove the offal from the turkey, set them aside. Cut off the neck and tips of the wings. Wash the carcass thoroughly and pat dry with a paper towel. Rub with salt and pepper inside and out.

Pour the trimmed parts with water, add 1 onion, celery, carrots, parsley and bay leaf. Bring to a boil, remove the foam. Cook for 40 minutes. Strain the broth and set it aside.

Finely chop flavors, mix. Start the turkey from the side of the neck, pin it with knitting needles. Tie up your feet with culinary thread. Mash a little oil with flour, rub this mixture into the skin of the bird.

Put the turkey in a baking dish, bake for 40 minutes at a temperature of 250 degrees. Melt the remaining oil, pour turkey on it, bake for another 50 minutes at a temperature of 180 degrees. Water the turkey with the excreted juice every 15 minutes.

Put the turkey in the baking pan. Add 1 chopped onion, pour in the broth, cook for 10 minutes. Pour the gravy into a saucepan, add offal, leek and cook for 15 minutes. Serve the turkey on the table, in a separate bowl to it gravy from the giblets.
