From ancient times, the Russian people had many proverbs and sayings about bread. “Bread is the head of everything”, “There will be bread — there will be lunch”, “Bitter lunch without bread”, “At the time of lunch, there is no bread at home”, “You won’t be full of bread and honey” - these and many other sayings talk about a reverent attitude towards this product. Why is bread considered such an important component of the diet?

How is bread useful?

Scientists-nutritionists came to an interesting conclusion: it turns out that ordinary bread contains almost all the nutrients that a person needs. These are proteins, carbohydrates; vitamins A, E, vitamins of group B; a large number of salts and minerals - selenium, magnesium, manganese, silicon, cobalt, zinc, chlorine, sodium, potassium, iron, phosphorus; and many more micro and macro elements and fiber.

With the help of bread alone, a person almost 50% satisfies the daily need for carbohydrates, 1/3 - for proteins, more than 60% - salts of phosphorus, calcium, iron and B vitamins. Bread is the source of about 30% of the daily calorie intake.

Which bread to choose?

Indeed, with today's abundance of different varieties of this product, it is very difficult to choose one or the other. Of course, many already had their own taste - someone takes exclusively rye bread, someone takes lush rolls, and someone takes only whole grain bread or bran bread.

However, whatever grade you choose, always pay attention to the crust. It is she who is the most useful component in bread. Surely many of you in childhood, bringing home a fresh, hot loaf, could not resist the temptation to bite a crisp. Intuitively, you understood its usefulness, because it is the crust that is the source of antioxidants and contains more beneficial compounds than the crumb. The beneficial properties of the crust help to resist the development of sclerosis and many types of cancer.

But not every crust is useful: only a well-baked, light brown color has these properties. But under-baked or, conversely, burnt crust can adversely affect health, especially in people with gastrointestinal tract problems.
