Peel soft pears. Carefully cut out the core and seed. Lubricate each pear with lemon juice, so that subsequently the pears acquire a dark, golden color.

Cooking the sauce. A tablespoon of mustard (without a slide), mix with a tablespoon of sweet (Dijon) mustard and mayonnaise. Combine everything in a bowl until smooth. Make sure that there are no lumps. Pour in three tablespoons of thick cream. Beat with a whisk. The mass should assume a uniform golden color.
