"Cold noodles" - this is how Nenmyeon is translated from Korean. This famous dish appeared several centuries ago and is still being prepared in North Korea. Cooking noodles quickly, despite a large list of ingredients.

You will need

  • - 400 g of buckwheat noodles;

  • - 300 g of beef;

  • - 100 g daikon;

  • - 1 hot pepper;

  • - ½ eggplant;

  • - 4 eggs;

  • - 1 cucumber;

  • - 2 tomatoes;

  • - 4 tbsp vegetable oil;

  • - sesame seeds;

  • - ½ cup soy sauce;

  • - 2 tsp Sahara;

  • - 2 tbsp vinegar

  • - cilantro, salt, black pepper.

First you need to prepare fresh vegetables. Peel the tomatoes and seeds and cut into thin strips. Cucumbers, previously peeled, cut into strips. Finely chop the daikon and greens.

Rinse the meat under running water and boil. Cut the finished meat into small strips. Do not pour the broth!

Cook the eggs and cut them into 2 or 4 pieces. Cook the noodles, rinse and add a little oil. Buckwheat noodles are cooked very quickly - just two minutes is enough.

Pour oil into a pan and fry boiled meat and eggplant, cut into cubes, adding 1 tablespoon of soy sauce and a little broth. Excess broth should be evaporated.

Bring the broth (main part) to a boil, add soy sauce, hot pepper and various spices, a little sugar and vinegar. Cool.

Arrange the cooked noodles, meat with eggplant, fresh vegetables and cover with broth. Put half the boiled egg in a plate and sprinkle with sesame seeds. The dish is served only cold. You can add a few ice cubes.

note

Some manufacturers sell buckwheat noodles with concentrated broth as a set. To prepare the dish, the concentrate must be diluted with cold water and add it to the finished noodles. If you are preparing a full-time nenmen, do not use concentrate.
