1

Clean the fish, remove all the fins, head, tail and entrails. Rinse thoroughly under running water, pat dry with a cloth, cut lengthwise and remove the ridge. Then grate with salt, pepper and oregano.

2

Peel and chop onions and carrots. Wash, dry, chop and fry the mushrooms in sunflower oil, along with onions and carrots. Add salt, paprika and semolina to them. Mix everything thoroughly.

3

Put the mackerel on a cutting board, grease inside with mayonnaise and put the filling. Then connect the halves of the fish and tie a strong thread.

4

Transfer the fish to the oiled foil, pour the mayonnaise on top and sprinkle with seasonings. Then wrap it in foil and bake in the oven for 35 minutes.

To make the surface of the fish ruddy, you can open the foil a few minutes before being ready.
