You will need
- vegetable broth - 300 ml
- dry white wine - 200 ml
- cream - 200 ml
- Brie cheese - 250 gr
- leek - 2 stalks
- celery - 1 stalk
- salt
- ground black pepper
- olive oil
- bread for toast

Cut the stalks of leek and celery into small pieces. Fry in a pan in olive oil until a “blush” forms.

Pour wine into a saucepan and let it boil for 5 minutes. Then pour the vegetable broth, cook for about 5 minutes. Salt and pepper.

While the soup is boiling, cut the bread into small sticks and bake in the oven at 200 degrees until a golden crust appears.

Remove the soup from the stove. Brie cut into small cubes and place in a saucepan with soup. Add cream.

Let the soup cool slightly, then place in a blender and beat well until smooth.

Pour the whipped soup into pots, put croutons and a piece of brie on top of each pot. Put the pots in the oven for about 10 minutes at 200 degrees. Serve hot. Bon Appetit!
