Cabbage Dumplings

Try to cook a tasty and unusual second dish - cabbage dumplings. They are very tender and served with melted butter and breadcrumbs.

You will need:

- 800 g of fresh white cabbage;

- 3 eggs;

- 2 tablespoons of crushed crackers;

- 3 tablespoons of semolina;

- 80 g butter;

- salt to taste.

Select a small young head of cabbage, cut a stalk and remove the top leaves. Cut cabbage into large slices and boil in salted water until soft. Throw the vegetable in a colander, let the water drain, and then place the cabbage under oppression.

Separate the yolks from the proteins. Pass the cabbage through a meat grinder, mix with semolina, yolks and salt. Beat whites in a strong foam. Add them to the cooled cabbage mixture and mix gently.

Boil salted water. Take a little cabbage mass with a teaspoon and dip in boiling water. Swipe the bottom of the pan to prevent the dough from sticking.

If the dumplings are boiling, add another 1 tablespoon of semolina to the dough.

Dumplings boil for about 15 minutes. When they come up and increase in size, catch them with a slotted spoon, cool, put on a dish. Pour the dumplings with melted butter and sprinkle with the toasted crushed crackers.
