  • ½ cup milk or 10% cream;

Cooking:

  1. Rinse the eggplants thoroughly and slice lengthwise. Then add plenty of salt to let the water run. Then the water must be drained, and then fry the eggplant in a pan with vegetable oil on both sides.

  2. Cooking toppings. It is necessary to finely chop the onions and fry it in a deep pan until rosy.

  3. Now you need to cut the tops of the tomatoes crosswise and scald them with boiling water. Then remove the skin and cut into small pieces. Put them onion and fry a little, add grated carrots and garlic.

If it turns out very thick - add more milk. Stir so that there are no lumps. Add the yolk, grated cheese and remove from heat. Stir until the cheese is dissolved and if necessary, add a little salt.

  6. We form a dish. In a baking dish we spread a layer of fried eggplant, then stuffing from minced meat, another layer of eggplant. Pour abundantly with sauce and sprinkle with grated cheese on top. It remains to bake in the oven until a beautiful golden cheese crust appears. It takes about 15 minutes at 200-220 degrees.
