If you like to bake, cook, then write in your notebook the next recipe for a pie with carrots. A delicious treat, suitable for tea for breakfast or dinner.

You will need

  • Required: average carrots per 100-110 g,

  • 100 g of brown sugar (you can use white sugar),

  • 100 g of roasted hazelnuts, crushed in a blender into crumbs,

  • 100 grams of soft butter at room temperature (remove it from the refrigerator an hour or two before cooking),

  • 4 tbsp. tablespoons cream 10%,

  • 1 tbsp. Amaretto spoon (you can add cognac, another liquor or do without this ingredient at all),

  • 100 g flour + half a teaspoon of baking powder,

  • 2 tbsp. tablespoons of honey and 30 grams of butter - for honey glaze,

  • cinnamon, cardamom, nutmeg - a pinch,

  • sesame seeds - for decoration (can be replaced with chopped nuts or not decorated),

  • some butter and flour to sprinkle on a baking dish.

Instruction manual

Three carrots on a fine grater, add a little sour cream or cream to it, mix and let stand for 10 minutes.

Grind hazelnuts in a blender until crumbs.

In a deep bowl, mix warm butter with brown sugar, add the yolks and mix. Add flour with baking powder, knead thoroughly. Pour 2 tbsp. tablespoons of cream and mix again.

Add carrot and nuts to the dough, another 2 tbsp. tablespoons cream, 1 tbsp. Amaretto spoon, spices and mix again until smooth.

Beat 2 proteins with a pinch of salt until strong peaks.

Gently introduce the proteins into the carrot dough: first half the proteins to lighten the dough, then the remaining half. We do not interfere for a long time so that the protein bubbles do not burst.

We spread the dough into a mold greased with butter and sprinkled with flour. In the middle of the dough we make a small depression so that when rising in the oven, the dough does not grow uphill, but aligns with the general level of the cake.

We bake the pie in the oven preheated to 180 degrees until cooked (I had a mold of 26 cm, so the cake was baked for 40 minutes; if the mold is smaller in diameter and higher in height, then it takes longer).

The cooled cake is covered with honey glaze. For the glaze, melt the honey with butter, wait until the bubbling mixture obscures for a couple of minutes and pour it onto the pie at once. We quickly smooth the glaze - it quickly hardens, and therefore in a minute it is difficult to smooth it out evenly on the cake. On top of the glaze, a little rash of sesame seeds.
