Mushrooms, due to their high protein content, are very nutritious. You can use them for cooking fresh, salted, pickled, dried and frozen. Salt mushrooms for the winter in a cold way and you will have a delicious gourmet dish on the table.

For salting in a cold way, take agaric mushrooms: russula, milk mushrooms, threshing mushrooms, mushrooms. Use only those mushrooms in which you are absolutely sure of edibility.

Sort out the mushrooms. Clean them of debris and debris. Remove all mushrooms with signs of decay and damaged by worms.

Pour plenty of cold water. Rinse them by gently mixing in water with your hands. Remove from the water with your hands.

Put the russules, thrills and breasts in a deep bowl and fill with cold water. Soak these types of mushrooms for 5-6 hours.

Take glass, ceramic, wooden, enameled dishes. Rinse it well and dry it.

Lay the mushrooms in tight rows in the prepared dishes, pouring each row with salt. For breasts, russula and thrush, take 50 g of salt per 1 kg of mushrooms, and for mushrooms - 40 g.

Put a wooden circle on the last row of mushrooms. The circle should be made of hardwood.

Prepare oppression. It can be a cleanly washed stone or a can of water. Put the oppression on a wooden circle and leave the mushrooms in a cold place for pickling.

After 5-7 days, all the salt in the mushrooms should dissolve. The resulting brine should cover all the mushrooms completely. If this does not happen, oppression needs to be increased.

When pickling mushrooms in several containers, transfer the mushrooms from one of them to the other, filling the dishes to the top. Leave the mushrooms to salted in a cool place for 1-1.5 months. Make sure the mushrooms are always in brine.

Put the salted mushrooms on a plate, rinse them if necessary. Add finely chopped onions to the mushrooms, pour them with unrefined sunflower oil and serve to the table with hot boiled potatoes.

Useful advice

When pickling mushrooms, use spices to your taste. You can put black currant leaves, cherries, greens and dill seeds, black peppercorns in a bowl with mushrooms.
