You will need

  • Required: 200 grams of softened butter,

  • 200 g of brown (cane) sugar,

  • 250 g flour,

  • 1 teaspoon of baking powder

  • 4 eggs,

  • 150 g dried cranberries,

  • 150 g of golden raisins,

  • 100 gr almonds

  • 2 pinch of cinnamon, nutmeg and ground ginger,

  • 100 ml of liquor (wine, brandy, etc.) - for impregnation.

Soak dried fruits in 50 ml of wine for a night or more. We take out the butter and eggs from the refrigerator, so that in the morning they will take room temperature.

In a deep bowl, beat 200 g of soft butter with sugar with a blender (mixer, whisk) to obtain a cream. Drive eggs into the oil mixture and beat until smooth.

Blend dried fruits in alcohol in the flour: for this we take 2 tbsp of 250 g of flour tablespoons and add to dried fruits. In the egg-oil mixture, add the remaining flour with baking powder and beat again until smooth.

Preheat the oven to 150 degrees. Cover the baking dish with baking paper.

Grind almonds 50 gr into flour. Add ground almonds and spices to the dough, knead until smooth.

Add dried fruits and 50 grams of almonds to the dough, mix thoroughly.

We spread the dough on top of the paper into the mold, smooth it out, making a small indentation in the middle - the cake will rise during baking, and the depression will not allow the cake to rise up the hill.

We bake a cupcake in a preheated oven for 2 hours - the first hour as usual, and the second hour - covering the cupcake with foil (so the cupcake is baked from the inside, and there will not be too much crust on the top).

Soak hot cupcake with 50 ml of wine, liquor, etc. Cool in shape.

Useful advice

We store the cupcake in baking paper or foil in the refrigerator - the cupcake will be even tastier if you leave it unattended for a week or two.
