Ingredients:

  • Zucchini - 2 pcs;

  • Fennel - 1 tuber;

  • Cherry Tomatoes - 100 g;

  • Celery - 2 stalks;

  • Juniper - 4 berries;

  • Razmarin - 1 branch;

  • Olive oil - 6 tablespoons.

Cooking:

  1. Before starting, we thoroughly rinse all the vegetables under running cold running water, then pour them over with boiling water and clean them with a sharp knife.

  2. Next, we start cutting vegetables: we cut zucchini into longitudinal slices over the entire area of ​​the vegetable, and fennel and pepper into strips.

  3. Then we cut the tomatoes in half, and the celery stalks in beautiful small cubes.

  4. Then combine all the vegetables, salt and pepper to taste. We lay this mixture on portioned plates, and even better on small bowls, it will look even more beautiful.

  5. Juniper berries are carefully rubbed in a mortar to get a homogeneous porridge-like mass.

  6. We thoroughly rinse the rosemary under running water, shake off the drops or dry the branches with a clean towel, remove the needles.

  7. Pour olive oil into a small bowl, heat slightly in the microwave, and then combine with rosemary and juniper puree.

  8. Pour our prepared vegetables with the resulting sauce. It is good to serve such an appetizer with a hot side dish, and especially with pork steak, steak or barbecue.

  9. Also note: you can replace a set of vegetables with any other one that you like best, but the main thing is to choose vegetables with different colors, because the dish looks much more beautiful and appetizing.
