Cooking omelet. Beat eggs with milk, salt. Rinse greens with water, remove coarse stems, chop finely. Add chopped greens to the egg mixture. Bake two omelettes in sunflower oil (fry each omelette on both sides).

Cooking toppings. Boil the shrimp, clean from the shell. Finely chop. Peel the avocado, remove the stone, mash the pulp with a fork. Pour the avocado with lemon juice. Crush the blue cheese. Combine shrimp, cheese and avocado, mix.

Spread the filling evenly over the omelets and roll them with rolls. Cut the rolls in slices. Put on lettuce leaves. The dish is ready.
Useful advice
Avocado must be taken ripe. If the avocado is not ripe enough (hard), put it in a paper bag with an apple and leave for 1-2 days. The fruit will ripen faster.
