Real truffles are expensive, not sold at regular grocery stores, and much tastier than any candy in boxes with the proud inscription "Truffles." The fact is that the “right” truffles are prepared from a mixture of chocolate, cream, egg yolks and butter, and therefore their shelf life is very short and the transportation conditions are unusually strict. But the most important "truffle" secret is that there is nothing easier and more interesting than making these sweets yourself.

You will need

    • 3 ½ tablespoons butter (82% fat)
    • 2 egg yolks
    • 1/4 cup sugar
    • 1/3 cup high fat cream
    • 360 grams of good dark chocolate
    • Cocoa powder

Remove the oil in advance and wait until it becomes soft, as for a cream.

Beat butter, egg yolk and sugar together.

Break the chocolate into small pieces and add it to the egg-butter mixture.

Heat the cream in a water bath.

Add chocolate mixed with butter-egg mixture. Constantly stirring, wait until all the chocolate has melted and the mixture becomes glossy, uniform.

Cool the chocolate mixture, it is called ganache, and put it in the refrigerator for several hours.

Prepare a bowl of cocoa powder and chilled balls.

Get the ganache, make small balls and quickly roll them in powder. If the ganache becomes too soft and sticky, return it to the refrigerator for 15-20 minutes. To avoid this, it is better to put a bowl of chocolate in an ice container in advance.

Some confectioners insist that when making truffles you can only roll them with your fingers. So that the surface of the candy is as uneven as the truffle mushroom.

Store truffles in an airtight container in the refrigerator for up to 1 week.

If you don’t have to make classic truffles, if you are ready to experiment, then you can safely refuse egg yolks, and replace the cream with the same volume of almost any liquid - milk, water, fruit puree, tea, coffee or alcohol. Note that when heated, the alcohol evaporates and, if you want to maintain a "degree", and not just the aroma, then alcoholic beverages must be added to the ganache after you remove it from the stove, but before you put it in the refrigerator.

You can flavor the truffles not only with liquor, but also add pepper, mint, sea salt to them, everything that seems appropriate and interesting to you. Also, in order to roll truffle it is not necessary to stick to one cocoa. Cinnamon, powdered sugar, coconut flakes, nut crumbs are suitable.

Useful advice

It is convenient to form truffles with thin latex gloves. So the heat of your body is less transmitted to the chocolate mass.
