On a wide preheated pan, lay thinly cut plates of bacon. Make sure that the fat is melted gradually, but not burn. From time to time you need to turn the plates and remove the greaves from the pan, adding new slices.

When there is enough fat, it is possible to add vegetables. Cut beets and carrots into small cubes, chop the onion and send to the pan. Fry and put simmer on low heat, under a closed lid, stirring occasionally. You can add a little water so as not to burn. Simmer until vegetables are tender, about half an hour.

Pour water into a pot and boil. Chop the cabbage and dip into the broth, then send chopped bell pepper and diced tomato. To salt. Finely chop the apples and add to the total mass, throw peas of pepper there.

Add a tablespoon of sugar without top and a teaspoon of 9% vinegar to the vegetable frying. Vinegar is needed so that the beets retain a bright, beautiful color. Mix the ingredients well and add the tomato paste. Simmer for a couple of minutes, with constant stirring, and then put the dressing in a pan with broth.

Cut the potatoes into cubes and lower them into the broth last. At the end of cooking, add bay leaf and finely chopped greens. When the potatoes are cooked, the soup is ready. Ready to eat borsch with sour cream, seasoned with fresh herbs. If desired, you can add cracklings to the pan or plate. Borsch without meat is almost a dietary dish, it is much easier to digest, therefore it is useful for those who want to keep their shape.
