Verrina is a French appetizer in a glass. Delicate salmon and fresh cucumber mousse is a very good combination for such a beautiful serving. Can be served in small glass vases.

You will need

  • For six servings:

  • - 150 g of fresh salmon, smoked salmon;

  • - 100 ml cream;

  • - 1 small onion;

  • - 2 cloves of garlic;

  • - 1 fresh cucumber;

  • - 1 egg yolk;

  • - half a lemon;

  • - 1 tbsp. a spoon of olive oil;

  • - dill, salt, freshly ground pepper, green onion.

Cut fresh salmon into pieces, put in the oven, heated to 180 degrees, for 10 minutes. Mix smoked salmon with salmon from the oven, dill, peeled onion in a blender.

Mix lemon juice from half a lemon with egg yolk, add olive oil, chopped green onions. There, squeeze the peeled garlic cloves through a garlic squeezer. Knead the aromatic fish sauce thoroughly.

Now mix salmon from a blender with cooked lemon sauce. Whip cream in a strong foam, gently combine them with salmon.

Rinse one fresh cucumber, cut it into small cubes, salt. Set aside for at least 15 minutes, then drain all the juice secreted from the cucumber. You can even squeeze out the cucumbers a little so that excess moisture does not get into the snack. Arrange the cucumber in small glass cups, pepper with ground pepper to taste.

Put on a cucumber on top a gentle salmon mousse. Garnish the verrina with fresh herbs. Refrigerate for 1 hour to cool the appetizer. You can decorate from above as you like - whole pieces of fish, slices of lemon. After that, serve ready-made verrina with salmon and fresh cucumber to the table.
