You will need
- - 1 kg of carrots;
- - 300 ml of water;
- - 1 kg of granulated sugar;
- - 3 g vanilla;
- - 1 teaspoon of citric acid.

Wash the carrots thoroughly, peel, cut into large rings and boil until soft in water. After this, drain the water, and cool the carrots a little.

Meanwhile, prepare sugar syrup by boiling water with 800 g of granulated sugar. Pour them carrots, bring to a boil, reduce heat and cook for 5 minutes. Remove from heat.

After 7-8 hours, bring the jam to a boil again, add 200 g of granulated sugar to it and cook until the syrup is thick and the carrot transparent. Add citric acid to the pan a few minutes before the end.

When the carrot jam has cooled, put vanilla in it and mix. Transfer the jam into jars with a screw cap, and then store in the refrigerator.
