Rub the cottage cheese through a fine sieve, add honey (necessarily light), beat in a blender. Pour 1/3 cup of water and lemon juice into a small saucepan, pour in gelatin, let it swell, then put on fire, bring to a boil and cook for 1 minute until crystals are dissolved. Allow to cool slightly.

In the curd-honey mass, introduce a solution of gelatin, whisk again in a blender. Beat the whites in a bowl until stable peaks form. Introduce gently whipped proteins into the curd mixture with a silicone spatula. Distribute the mousse into silicone molds. Refrigerate for 1-2 hours to set.

If you use frozen berries, they need to be poured into a sieve and thawed, and the juice stored. Pour the juice of berries into the stewpan, add honey, gelatin. As soon as the gelatin swells put on fire and boil for 1 minute until the crystals are dissolved. Remove from heat, add berries and cool.
