To cook curd muffins, you will need:

- 250 g butter or margarine;

- 300 g of cottage cheese;

- 250 g of granulated sugar;

- 500 g flour;

- 4 eggs;

- ½ cup raisins (pitted);

- 1 lemon;

- ¾ tsp soda;

- salt.

For glaze:

- 1 glass of powdered sugar;

- 3 tbsp. l currant juice.

Scald lemon with boiling water, carefully cut the zest and grate it on a fine grater. Squeeze the juice from ½ lemon. Pass the cottage cheese through a meat grinder, and sift the wheat flour through a sieve.

Remove the butter or margarine from the refrigerator in advance to soften. Then whisk the sugar and butter in a bowl with a whisk or mixer. Add one egg each, grated lemon zest and the juice of half a lemon, cottage cheese, raisins, a pinch of salt, flour, and baking soda, which is quenched in lemon juice. Mix everything thoroughly and knead the dough - by consistency it should resemble sour cream.

Place the dough in silicone muffin tins, filling them about 2/3. Bake in an oven at moderate temperature (approximately 180 ° C) for 25-30 minutes. Then remove the baked goods from the oven, carefully remove from the molds and let the muffins cool. Then cover with glaze. To prepare it, mix the powdered sugar with currant juice until smooth. Dry the glazed muffins in a warm oven and decorate to your liking.

Chocolate Cottage Muffin Recipe

For the preparation of curd muffins according to this recipe, you will need the following products:

- 250 g of soft cottage cheese;

- 250 g of granulated sugar;

- 1 egg;

- 150 g of chocolate;

- 200 g of wheat flour;

- 30 g of cocoa powder;

- 1 tsp drinking soda;

- ¼ tsp salts;

- 250 ml of water;

- 80 ml of vegetable oil;

- 1 tbsp. l table vinegar;

- 1 tsp vanilla essence.

Preheat the oven to 180 ° C. Lay out the muffin molds with paper blanks. Whisk soft curd with a piece of granulated sugar (with about 50 grams) until smooth in a small bowl. Add the egg and mix everything into a homogeneous mass. Grate the chocolate on a coarse grater and combine the resulting chocolate chips with the curd mass.

Sift the flour into a large bowl and mix it with the remaining sugar, cocoa powder, soda and salt. Add water, vegetable oil, 6% table vinegar, vanilla essence and mix all the ingredients until smooth.

Half fill the prepared dough muffin molds. Put a full tablespoon of cottage cheese in the center of each form. Bake in the oven for 20-25 minutes until the wooden toothpick inserted in the middle of the muffin stays dry after being removed.

Then remove the baked goods from the tins, cool completely on the wire rack and serve. If desired, muffins can be coated with lemon or orange glaze.
