Merdzimek Chorbasy is a Turkish soup made from red lentils with mushrooms. Lentils contain many useful substances: protein, phosphorus, magnesium, calcium, iron. In Turkey, it is customary to eat soups for breakfast.

You will need
- - 200 g of red lentils
- - 1 liter of water
- - 100 g of olive oil
- - 1 onion
- - 1 carrot
- - salt to taste
- - 200 g of any mushrooms
- - greens

Rinse the red lentils well first. Chop the onion finely.

Cut the mushrooms, grate the carrots.

Heat the pan with vegetable oil, add carrots, and lightly fry the onions. Then add the mushrooms and fry for 5-7 minutes.

Add red lentils, fill with water and cook with the lid closed on low heat for about 15-20 minutes.

At the end of cooking, add salt to taste, pepper, add mint and cook for 1-2 minutes.

Pour into plates, decorate with greens. Serve with croutons.
