Souffle cakes are always softer than regular cakes. The Yagodny souffle cake is made from a delicate biscuit and an airy berry souffle, which melts in your mouth. Already one aroma of goodies is able to bring all the household together for a cup of tea.

  • For biscuit:

  • - 110 g of kefir, sugar, flour;

  • - 2 g vanilla;

  • - 1 egg.

  • For souffle:

  • - 400 g of sugar;

  • - 145 ml of cherry juice;

  • - 120 g of blackberry;

  • - 55 g raspberry jelly;

  • - 50 ml of boiling water;

  • - 3 egg whites;

  • - 2 tbsp. tablespoons of lemon juice;

  • - 1 1/5 teaspoon agar-agar.

First, let's cook the biscuit. Divide the egg into protein and yolk. Beat the yolks with 1/3 of sugar, add kefir to it, add flour and stir. Beat whites separately with 2/3 of sugar, add vanilla to them.

Cover the form with a diameter of 26 centimeters with parchment, grease with oil. Put the finished dough, bake a biscuit for about half an hour at 175 degrees. Cool the biscuit on the wire rack, then cut it in half lengthwise.

Pour raspberry jelly with boiling water, stir until it dissolves to make a sweet syrup. Beat egg whites until stable peaks, pour in a thin stream of syrup. Beat a couple more minutes. Soak the agar-agar in cherry juice, add lemon juice, put on high heat, bring to a boil, add sugar, boil for 10 minutes. Then pour this mixture into whipped proteins, mix.

Now proceed to the assembly of the cake. Put half of the souffle on the first layer of biscuit, evenly lay out the blackberry remaining in the souffle. Top with a second biscuit, pressing it a little.

You can decorate the finished Yagodny souffle cake with icing, which is easy to prepare by melting white chocolate in heavy cream. You can just sprinkle with powdered sugar. Put the cake in the refrigerator for 1 hour, after which you can serve it on the table.
