If you want to cook chicken in a pan, then it is better to pre-chop it into small pieces. Cut the bird washed and dried with paper towels with a large knife. Set aside for now. Now you need to decide what you want to do with it - stew or fry.

If you want to stew, then proceed as follows: in a pan with high sides (this is important!) Pour a couple of tablespoons of vegetable oil and put it on high heat. While the pan is warming, rub the chicken with a mixture of salt, black pepper and curry. By the way, there will be some dried spice (basil, marjoram, thyme, tarragon), also add it to the rub. Spread the chicken in a pan and fry over high heat on all sides.

While the chicken is golden, quickly chop the onion, rub the carrots. Pour the tomatoes over boiling water and peel them, chop them finely. In a deep container, mix 2 cups of water, tomatoes, onions, carrots, half a cup of tomato juice. It is not forbidden to add a crushed bay leaf. Reduce the fire under the chicken, pour the future sauce, cover with a lid. Let the hour quietly stew. If you forget about the contents of the pan for an hour and a half - it's okay, most importantly - do not forget to check for liquid, it should not evaporate.

If you want to fry a bird, then it is much easier. It should also be pre-cut into wings, legs and breast. Grate each chicken portion with the following mixture: coarse sea salt, finely chopped garlic (2 cloves), white pepper, paprika (it will give an amazing color when frying). Put the chicken on a well-heated pan and fry it from all sides without covering.

Transfer the fried chicken to a container. Pour a package of natural yogurt into the juice from the meat left in the pan, add a tablespoon of tomato juice and a teaspoon of flour. While stirring, bring to a thickening over low heat. Pour into a sauceboat, serve to chicken. This dish goes well with a light salad.
