Tomato preparation
Tomatoes for this dish can be prepared in two ways, but the point is to extract the flesh and form a container for minced meat from each tomato.
The first method: cut the tomatoes crosswise to about the middle, slightly open the quarters in different directions and use a spoon to select all the flesh.
The second method: cut off the top of each tomato and also select the pulp. Before baking, these cut "caps" will need to be hoisted into place. Such caps look especially impressive if they have not removed the stem.

Preparing the filling
Put in the blender bowl the tomato pulp, sliced bell peppers and garlic, chopped parsley, salt, pepper, saffron, pour 2 tablespoons of olive oil and chop everything until smooth. Pour the mixture into a deep frying pan, pour in the washed raw rice, bring to a boil, and then simmer for 30 minutes under the lid, stirring constantly.

Dish assembly
Fill the tomatoes with filling; if the “caps” were cut, then put them on top. Put the tomatoes in a refractory form, pour 1 tablespoon of olive oil, cover the form with foil. Put in the oven, preheated to 200 degrees, and bake for 40-50 minutes.
