For soup with meatballs you will need vegetables - potatoes, carrots and onions. For meatballs - 400 g of minced meat and 2-3 tablespoons of semolina. You can add a little vermicelli to the soup. You will also need butter, parsley root, bay leaf, black pepper, a couple of cloves of garlic, salt.

Peel the parsley root and carrots, cut into small pieces or grate on a coarse grater.

Stuffing minced meat in a cup, peel a small onion and grate directly into the minced meat on a fine grater. Add salt, pepper, mix everything. Pour semolina there, mix again. Hands to form meatballs, put on a cutting board.

Pour 2 liters of water into the pan and put it on the fire. When the water in it boils, it is necessary to salt and lower it sequentially:

- meatballs, slices of carrots and parsley, boil for 15 minutes;

- chopped potatoes, bay leaves, garlic, cook until potatoes are ready;

- A handful of vermicelli, bring the soup to a boil and remove from heat.

Now put the oil and herbs in the soup, cover the pan with a lid and let it sit for 10-15 minutes.

When the soup is infused, pour it on the serving plates. It is good to serve fresh bread, slightly greased with mustard.
