Kharcho soup is not only national, but also a very popular dish of Georgian cuisine. Surprisingly, potatoes are not used to prepare this dish, as we are used to. The most basic is beef, rice and onions. All the rest is specific aromatic additives, thanks to which the soup is obtained with a slight acidity.

  • - onion 150 g

  • - walnuts 100 g

  • - garlic 3 cloves

  • - tkemali sauce 150 g

  • - sunli hops 2 tsp

Rinse beef and cut into small pieces. Only low-fat tenderloin should be taken. Pour the meat with water (2.5-3 liters) and cook for 1.5 hours. During cooking, descaling is required periodically. For the transparency of the broth, you can strain it, dip the meat into it again and continue cooking, adding the rest of the ingredients.

Rinse and pour into the broth. Cook for about 10 minutes. Finely chop the onion and fry for several minutes in vegetable oil. Then add it to the broth.

Grind walnuts well in a blender and send to soup. Then we add Georgian tkemali sauce, red pepper and peas, as well as suneli hops. Cook for about 7 minutes. Then we lower the garlic passed through the press into the broth and remove the pan from the heat. The dish should be infused for about 20 minutes. Sprinkle soup with chopped herbs and can be served.
