Scordalia is a Greek potato and garlic snack. You can eat this appetizer with brown bread or with vegetables.

You will need

  • - juice from 1 lemon;

  • - vegetable oil 180 ml;

  • - olive oil;

  • - parsley;

  • - peppercorns and ground, salt.

Wash potatoes, onions, celery and carrots, peel and cut into large cubes.

Pour water into the pan. Put carrots, peppers, parsley and onions. Bring to a boil and cook for 15 minutes. Add celery and potatoes, cook another 20-25 minutes. Then rattle the potatoes into a bowl (the rest of the vegetables will not be needed).

Peel, chop and grind the garlic with salt. Mash half the potatoes in mashed potatoes and mix with garlic. Mash the remaining potatoes with vegetable oil. Combine with garlic puree, salt, pepper, pour a little olive oil and lemon juice on top. Spread on a piece of brown bread and garnish with greens.
