Pies have long been present on the Russian table. They were made with a variety of fillings: cabbage, mushrooms and, of course, with fish. Today, such a dish is also popular, and there are many recipes for its preparation. Even the fish filling in the pie can be different.

When you don’t feel like spending a lot of time preparing pies, the dough for them is best done on kefir. In this case, they will turn out to be very tender and soft. Well, a variety of fish is suitable for the filling, but they are especially tasty with salmon or salmon. To make pies for this recipe you will need:

- 2 eggs;

- 500 ml of kefir;

- 1 teaspoon of soda;

- a pinch of salt;

- a pinch of granulated sugar;

- flour;

- 500 g of salmon or salmon fillet;

- a bunch of green onions;

- vegetable oil for frying.

First you need to prepare the filling. To do this, wash and dry the fish fillet, slightly salt it, wrap it in foil and put in the oven for 20 minutes so that it is baked. Then cool to room temperature, cut into small pieces and mix with green onions.

To make the dough, beat the eggs, then mix with kefir, add sugar, salt and soda. Mix everything well and gradually add flour. When the mass will be difficult to mix in a cup, it should be transferred to the table and add more flour, how much dough will take. You don’t need to put too much - the dough should not stick to your hands, but at the same time be soft enough.

Then the dough must be rolled into several thick sausages, cut each into small pieces, rolled them out using a rolling pin into circles. In the middle of each lay out the filling and close the edges. After this, the patties need to be fried in a pan with vegetable oil until golden brown.

It is not necessary to extinguish soda with vinegar - kefir will take on the role of the latter.

Fish pies on yeast dough are no less tasty, although their preparation takes a little more time. For them it is necessary:

- 2 eggs;

- 1 bag of dry yeast;

- 300 ml of milk;

- 4 tbsp. tablespoons of sugar;

- a pinch of salt;

- 3.5-4 cups flour;

- 2 cod;

- ½ cup rice;

- onion head.

First prepare the dough, mixing the yeast, 6 tbsp. tablespoons of flour and sugar in a separate bowl. Then they need to pour warm milk and mix everything thoroughly so that there are no lumps. Put the dough in a warm place without drafts for 15 minutes, so that it foams.

After the set time, you need to beat the eggs with salt in a cup and add everything to the dough. Then gradually add flour, kneading soft dough. Cover with a towel and leave for 40 minutes to make it fit.

In the meantime, you should prepare the filling - boil the rice in salted water, and gut the cod, wash, separate the pulp from the bones and fry in vegetable oil. When the fish has cooled a little, it needs to be finely crushed, mixed with rice and salt. Add chopped onion and mix well.

The finished dough must be rolled into a sausage, cut into 25 parts and each turned into a cake using a rolling pin. Put the filling in the middle of the cakes and blind the edges in any way. Ready cakes should be put on a baking sheet, greased with olive or sunflower oil, and put in an oven preheated to 180 ° C. Bake until golden brown.

In the process of cooking, the oven should not be constantly opened to check the readiness of the pies - they may not turn out to be magnificent.

Ready hot cakes must be greased with melted butter or yolk, wait 10 minutes, put on a plate and serve.
