To prepare pumpkin jelly, we need a cake. We get it by grinding the pumpkin and squeezing the juice. We grind the pumpkin either in a juicer or by rubbing it on the smallest grater. Then squeeze the juice with gauze. The juicer will do everything herself. The juice obtained in the process of obtaining oilcake is not needed in full. Therefore, immediately pour 150 ml of juice into a separate cup, and the rest can be drunk or used to prepare pumpkin jelly, replacing the juice with an equal volume of water.

We put the cake in a saucepan, where we add hot water, put sugar and cinnamon. Mix everything thoroughly so that the sugar dissolves. Put a saucepan with this mixture on high heat and bring to a boil. Immediately remove the saucepan from the heat and strain it using a fine sieve or gauze.

Now mix pumpkin juice with potato starch and pour this mixture into a hot pumpkin broth. Return the saucepan to the fire and bring the mixture to a boil, with constant stirring with a whisk or spoon.

Remove the saucepan from the heat. Now you need to let the jelly cool down a little and pour over the bowls. Let’s cool the jelly completely and serve it as a dessert.

During such cooking, you can add a little fresh grated orange or lemon peel to this jelly to revive the taste of jelly with a light citrus aroma.
