Okroshka or summer soup is a wonderful summer dish that refreshes on hot days and goes well with boiled chicken eggs, fresh cucumbers, radishes, ham and potatoes.

Okroshka comes from the Russian word, literally meaning "chopping" to chop, so the vegetables for cooking are cut into small cubes.

There are three types of cold dishes - with kvass, mineral water and kefir, diluted with water and vinegar.

Kefir, and even cream mixed with water, can be interchanged, it remains only to experiment with the amount of water and salt.

If children do not like kefir or kvass, you can collect a salad from a vegetable base, you just need to add mayonnaise or another salad dressing to the plate. Not only children, but also adults will be satisfied.

Kefir goes well with egg yolks, a delicious creamy base is obtained, in which you can add a little mustard or horseradish to get a rich, slightly spicy taste.

You can make okroshka according to the classic recipe or add something new - for example, smoked ham, and replace fresh cucumber with salt.

Vegetarians can cook okrosha without meat only with vegetables, mineral water or kvass.

Vegetables are mixed with any meat: veal, chicken, beef, sausages, there are many options - it all depends on your imagination.

To prepare okroshka you will need:

· Chicken eggs - 6 pcs.;

· Sausage or smoked ham - 150 g;

Boiled potatoes - 4 pcs.;

Radish - 10 pcs.;

· Fresh cucumber - 2 pcs.;

Dill - to taste;

Green onions to taste;

Mustard - 2 tbsp;

Horseradish - 1 tbsp;

· Salt and pepper - to taste;

Kvass or kefir - 0.5 l.

Boil chicken eggs in salted water. Remove the shells from the cooled eggs, cut the egg into a cube. Some housewives separate the protein from the yolk and add only the yolk to the okroshka, which is ground through a sieve.

Prepare the vegetables. Dice a fresh cucumber, ham or smoked sausages, boiled potatoes (it should not be too soft, but not hard).

Choose a medium radish to make it easier to cut. Fresh cucumber can be mixed with salted.

Put eggs and vegetables in a pan.

Add finely chopped dill and chives. Some housewives add garlic dressing from garlic arrows instead of green onions. Try it, very tasty!

In 0.5 kefir, pour 2.5 cups of water at room temperature, salt the liquid, add a little vinegar (do not overdo it).

You can add horseradish and mustard immediately to the jar of kefir, but it is better to add spices individually to each serving.

If you do not like kefir, then fill the vegetables with kvass or mineral water.

The amount of liquid depends on your desire - you can make the consistency of soup or vegetable porridge. The more vegetables or meat, the faster you get enough.

If the main goal is to quench your thirst, then add more liquid to the plate.

Like all Russian soups, okroshka is very different in composition depending on the region, season, and what grows in the hostess's garden.

Sliced ​​vegetables are usually stored separately in the refrigerator, adding kefir or kvass to the plate before each meal.
