You will need

  • In two servings:

  • - 2 small round zucchini

  • - 1 teaspoon of olive oil

  • - 3 heads of garlic

  • - 1 small onion, finely chopped

  • - 50 g finely grated carrots

  • - 1 teaspoon of caraway leaves

  • - 1 teaspoon oregano leaves

  • - 2 canned artichoke cores

  • - 0.5 teaspoon of lemon pulp

  • - 0.5 teaspoon of salt

  • - 20 g nuts of finely chopped cashew nuts

  • - 25 grams of feta cheese, crumbled
  • For serving:

  • - arugula leaves

  • - Cherry tomatoes

  • - young radish

  • - olive oil for dressing

Preheat the oven to 150 degrees. Then cut the tails of the zucchini. Lubricate the baking dish with olive oil, put zucchini and garlic on it, leave to bake for about 50 minutes.

Take out the zucchini, cool them slightly, carefully remove the pulp from them with the help of a spoon and place it on a separate plate. Do not turn off the oven.

Heat the oil in a skillet and lightly fry the onions for 5 minutes. Add carrots, oregano, and fry for another 5 minutes until the carrots are soft. Add the pulp of zucchini and chopped artichokes, leave to fry for another 2 minutes.

Mix lemon zest, salt, chopped nuts and add to the mixture in a pan. Tightly fill each zucchini with this mass, crumble the feta cheese on top, and leave it in the oven for another 15-20 minutes (until the cheese turns golden).

Serve the finished zucchini with arugula leaves, cherry tomatoes and radishes, sprinkled with olive oil.

Useful advice

Small round zucchini would be an ideal option, however, if you find them - this is a real problem, just divide the regular oblong small zucchini into pieces.
