Wash the meat, soak in a towel, removing excess water.

Grind basil, parsley, dill and garlic. Mix sour cream, herbs, garlic, salt, pepper, oil in a bowl.

Lubricate the mixture with meat and tightly wrap in a film.

Turn the piece over periodically. Soak the meat for 24 hours under oppression for better pickling: the first 5 hours at room temperature, then in the cold.

Bake in a bag at 180 degrees.

Cut the bag on top, grease the meat with vegetable oil.

Set the oven to grill mode. Bake at 160 degrees 25 minutes.
