Carrot cake with almonds is cooked in an hour and a half. It turns out hearty and healthy pastries.

You will need
- For four servings:
- - almonds - 300 g;
- - two carrots;
- - sugar - 200 g;
- - wheat flour - 50 g;
- - four eggs;
- - lemon peel - 3 tbsp. spoons;
- - Cointreau - 1 tbsp. a spoon;
- - baking powder - 1 teaspoon.

Rub two large carrots on a grater. Grind the almonds into flour, mix together.

Divide the eggs into squirrels and yolks. Beat yolks with sugar (100 grams), add baking powder, flour, zest and cointreau (liquor). Add a little cinnamon if desired. Mix this mass with carrots and almonds.

Beat whites with sugar (100 grams), mix in the dough. Put the dough in a deep, greased form.

Bake a little less than an hour. The oven should be warmed to a temperature of 180 degrees.

Remove the cake from the mold, let it cool slightly.
