  • For meringue:

  • - 4 egg whites;

  • - 14 tbsp. spoons of powdered sugar.

  • For cream:

  • - 250 g of mascarpone;

  • - 4 tbsp. tablespoons of powdered sugar, cream 35% fat;

  • - 1 tbsp. spoon of orange liquor, orange zest.

  • Additionally:

  • - 200 g pitted grapes;

  • - 25 g of chocolate;

  • - 1 tbsp. a spoon of orange zest.

First, prepare the meringues. Separate the yolks from the proteins. Beat whites by slowly adding powdered sugar to them. Beat with a mixer at medium speed to form stable peaks. Take your time, meringues should turn out with a gentle, viscous center.

Cover the baking sheet with baking paper, put the protein mass with two spoons. You don’t have to try hard - the appearance of the meringues does not play a special role here. Bake for 60-70 minutes at 120 degrees. Do not open the oven door during this time! Meringues at first seem soft, but after hardening they will become hard and crunchy.

Make a cream. Combine mascarpone, cream, sugar, zest and liquor. Beat everything with a mixer until smooth. The amount of cream is adjusted based on the fat content of the cheese. The mass should be elastic.

Take grapes pitted and with thin skin. Cut it into rings.

Collect the cake. Put on a flat dish with one layer of meringue, pressing them tightly to each other. apply the first portion of the cream, lay out a portion of the grapes. Top with cream again. Repeat the layers in the same sequence. The third layer is meringues. Cover the cake with cream on all sides.

Garnish a meringue cake with mascarpone and grapes with grated chocolate, grapes and orange zest. Keep the cake in the refrigerator for at least half an hour so that the meringues go soft, looking like toffee. If you like crunchy meringues, then serve the cake immediately.
