Sweets with sweet almonds and a cherry inside are an ideal choice for a cup of tea or coffee. Instead of cherries, you can use a variety of candied fruits or nuts for the filling.

You will need

  • - 200 g of almonds;

  • - 100-150 g of chocolate;

  • - 100-150 g of powdered sugar;

  • - 2 tablespoons of lemon juice;

  • - 30-40 ml of cognac (Amaretto liquor);

  • - dried (candied) cherries by the number of candies;

  • - apples;

  • - toothpicks;

Pour boiling water over the almonds for 10 minutes, then drain the water and pour the almonds over with cold water. Drain the water again and, after peeling the nuts from the husks, dry on a towel.

Grind the dried almonds in a coffee grinder into the smallest crumb. Mix chopped almonds with sifted icing sugar, lemon juice, liquor and mix thoroughly until smooth. Knead the mass well with your hands until it becomes, like plasticine, smooth and elastic.

If necessary, hands and a table can be sprinkled with powdered sugar. If the marzipan mass sticks to your hands or crumbles, add, respectively, powdered sugar or liquor. Give the finished marzipan the shape of a ball, wrap it in plastic and place in the refrigerator overnight.

For the filling, soak cherries in cognac and also leave overnight. When using dried cherries, it is best to add a little boiling water to make the cherry soft. The next day, removing the cherry from the cognac, drop it onto a sieve and let the liquid drain. Dry the cherry on a paper napkin.

Prepare a bowl with a small amount of vegetable oil, cover the tray with parchment, grease it with a thin layer of vegetable oil. After wetting the table and hands with a little oil, divide the almond mass into 2 parts. Roll a “sausage” from each part and cut it into pieces.

From each piece, form a ball, flattening it into a cake. In the center, place the cherry and gently pinch the edges with a marzipan mass, rolling a ball. Put the sweets on parchment and place in the refrigerator for 1 hour.

Melt the chocolate in a water bath. Stringing sweets on toothpicks, dip in chocolate. Then insert the toothpicks with sweets into the apple and refrigerate for 1 hour to freeze the chocolate. Then carefully remove the toothpicks, keep the candies in the refrigerator.
