- -3-4 chicken bones, skinless
- -1-2 tablespoons of olive oil
- -2-3 stalk of celery, chopped
- -2 large onions, chopped
- -2-3 large carrots, chopped
- -2 cloves of garlic, chop
- -2-3 diced tomatoes
- -1 medium sliced zucchini
- -8 cup chicken stock
- -1 glass of white wine
- -1/2 tsp ground black pepper
- -1/4 teaspoon red pepper
- -1/2 teaspoon thyme
- -3/4 cup rice
- -1 cup frozen corn
- -1 cup frozen peas
- -1-2 cups frozen cauliflower

In a large saucepan over medium heat, heat olive oil and start cooking chicken bones. After 3-4 minutes, add celery, onions, carrots, garlic, tomatoes and zucchini. Fry for about 5-7 minutes.

Add chicken stock, wine, black pepper, red pepper and thyme. Reduce the heat to low, cover and let simmer for an hour.

After an hour: add rice, frozen corn, peas and cauliflower. Stew for another 20-30 minutes - the cooking time will vary depending on the variety of rice that you use. For example, brown rice takes longer to cook than white. Be sure to check the degree of rice preparedness before serving.
