From zucchini, as a rule, prepare pancakes. This recipe is unusual in that thanks to the crispy crust, the croquettes are very juicy with a delicate filling inside. Zucchini croquettes are ideal for the daily menu, and can also be used as a full vegetarian lunch.

  • - ground oatmeal (3.5 tbsp);

First you need to rinse the squash well under running water, removing all contaminants. Places with a thick skin cut with a sharp knife. Take a grater with large divisions and grind all zucchini. Transfer the grated zucchini in a separate cup, salt and leave for 30-35 minutes. During this time, the vegetable will give juice, which should be squeezed, leaving only the flesh.

Next, grate the cheese also on a grater, add to the zucchini, mix. Remove the top husk from the garlic cloves, wipe through a fine grater and transfer to the zucchini with cheese. Stir again. Add chopped onion to the mixture, and then gradually introduce the starch, pre-combined with the egg. Lastly, put oatmeal crumbs. Stir the vegetable "minced meat" several times in a row and leave for 5-7 minutes to insist.

Wash your hands and begin to form small balls from the vegetable mixture. Cornflakes need to be prepared in advance by grinding in a blender. Roll each ball gently on all sides in crumbs and put in a pan with heated olive oil. Cook croquettes until lightly toasted on all sides.

Put the finished croquettes from zucchini on a paper towel. This must be done so that the excess oil is completely absorbed and the dish is not very greasy.

Additionally, boiled cauliflower or broccoli can be added to the ingredients.
