Cut the cucumber into small cubes. Dip the cubes in slightly salted boiling water, cook them for 4 minutes. Dry the cucumbers.

Make the sauce. Place egg yolks in a heatproof bowl, fill with water and semi-dry white wine. Place the bowl in a pan with hot water, whisk until foamy, whisk the melted butter gradually while whipping. In conclusion, add lemon juice, paprika and salt to taste.

Mix the finished sauce with chopped onion and pour cucumbers on it. Put sliced smoked meat on top.
Useful advice
Instead of smoked meat, you can use smoked fish. In this case, instead of semi-dry white wine, it is necessary to add semi-sweet red to the sauce.
